Santa Claus Jack Quesadilla from Nightmare Before Christmas!

We came up with this fun Jackadilla the other night and this is a fun dinner to make for or with older kids around Christmas time.

Santa Claus Jack Skelleton

2 Tortillas
Brown Rice
Shredded Cheese
Black Beans
Salsa
Sour Cream

Sprinkle cheese & brown rice (cooked) in between the 2 tortillas. Melt in the microwave for 1 and a half minutes.  Decorate the face with cooked black beans.  We used salsa to make the hat and sour cream.  Super easy and my boys loved this!

Apple Owl ...Hoot Hoot Eat Some Fruit!!

I just love Owls and my boys do as well.  We get several owls hanging around our house and they are so much fun to watch!   I created this Fruit Owl for NBC's recipe site Dinnertool.com. This is such a fun Fall/Winter after school snack and you will be surprised at how easy it is to put together.  It's also a fun way to get the kids to eat their fruit!

You cut a green apple in half. Take the other half and slice half of it for the wings. Cut a small circle for the head using a kitchen knife.  Make the ears from scraps.  Cut a marshmallow in half for the eyes. We used mandarin oranges for the beak & feet. Place on chocolate chips for the pupils. Place a pretzel rod (we like Snyder's) under the feet..super easy & kids will love this!

Mickey Mouse Quesadilla & Disney!

We just got back from Disney and had the best time!  We spent Thanksgiving day at Magic Kingdom. Really busy, but great weather!  We have made lots of Disney fun food in the past, but were inspired to make Mickey Mouse for dinner one night early last week after packing for our Disney trip.  We made Mickey Mouse Quesadilla's!  My boys loved it and it's also great way to load them up on black beans!:)

Mickey Mouse Quesadilla

2 Tortilla's (we like Ortega
Black Beans
Brown Rice
Shredded Cheese
Salsa

We sprinkled cheese and brown rice in between the 2 tortillas and then microwaved for 1 minute. We cooked our black beans and they decorated the face. We cut some of the black beans in half using kitchen scissors for the sides of the mouth.  We left a opening in the mouth and added salsa to look like his tongue.

Really easy and the kids can have fun making their own Mickeydilla!

Here we are in front of the Disney Castle!

The best moment for me was seeing my 2 year old meet Buzz Lightyear!  He looks a little concerned in this picture, but was so excited to see him and gave him lots of hugs!

We love Disney and hope to go back again very soon!
