Mexican Grave Yard Dinner


We always love to get creative with our mexican meals that we have once a week.  We made this Mexican Grave Yard the other night for a fun Halloween dinner or lunch.  It's easy to make and the kids will love it!  My boys thought this was awesome!

Mexican Grave Yard Dinner

2 Whole Wheat Tortillas (we like Ole xtreme wellness brand)
Black Beans
Shredded Cheese
Brown Rice
Sour Cream
Shredded Lettuce

Place the cooked black beans, rice, & shredded cheese on half of each tortilla.  Fold the other half on top and place them in the microwave for 1 minute until the cheese is melted.  Cut out the tomb stones using kitchen scissors. Place the tomb stones on a plate and place shredded lettuce on the bottom to look like grass.  We made the RIP with black beans that we cut in half.  We shaped the ghosts with sour cream and used black beans for the eyes & mouth.
