Earth Day Dinner
I wasn't even aware of Earth Day being this week until one of our lovely Facebook followers asked us a few days ago if we had come up with any good Earth Day ideas. Wish I would have known earlier so we could have been making lots of fun Earth Day goodies. However, we did come up with this fun dinner last night and my boys loved it! I was planning on burritos so this is a Mexican Earth Day Dinner!

1 Spinach Tortilla
Just a drop of Blue Food Coloring
A Small Amount of Salsa
We cut out 2 circles from the spinach tortilla with a round cookie cutter. It's just as easy to use kitchen scissors. It looked like this...
We put some a black beans, brown rice, and cheese on 1 tortilla round and topped with the other tortilla round. We cooked that in the microwave for about 50 seconds. We colored our sour cream with a drop of blue food coloring and spread that around the top to look like the earth. You could put it in a baggie and snip off the tip to pipe it on as well. We made a tree trunk out of (already cooked) refried beans and we cut out small circles from the tortilla scraps for the tree. We made grass out of lettuce. We wrote Earth using black beans and made little hearts using a couple small dots of salsa and then shaping the hearts with our spoon.
This was easy and lots of fun to make! It's a fun way to start a conversation with the kids on how to keep the Earth clean!
