Jack-O-Fiesta!
We made this fun and easy Jack-O-Latern Quesadilla a few weeks ago for dinner and my boys loved it! It's a great way to get the kids to load up on some black beans.
We used 2 orange veggie tortillas, shredded cheese, black beans, and just a small piece of a spinach tortilla for the stem(you could use avocado or anything really).
We melted some shredded cheese in between the tortillas in the microwave for 1 minute. Heat about a half a cup or more of black beans and add those for the eyes, nose, and mouth. Cut off a piece or a spinach or regular tortilla for the stem.
A Pumpkin Lunch!
This is the last Halloween lunch that we made that was featured in New Jersery Family magazine. Super easy!
Jack o’ lantern Sandwich...
1 slice of dark German wheat bread
2 slices of cheddar cheese (or American)
1 slice of turkey (optional)
2 green grapes
Cut the bread into a circle. Top with turkey and
cheese (you may have to use 2 pieces) to fit
the bread; cut out eyes and a mouth for a pumpkin
face. Place grapes on top for the stem.
Pumpkin Shaped Tortilla Chips...
Preheat oven to 350°. Cut tortillas into pumpkin shapes with pumpkin cookie cutters. Place your pumpkin shapes on a cookie sheet and spray with cooking spray. Flip them over and spray the other side. Bake about 10 minutes, turning after 5 minutes, then sprinkle with kosher salt. My boys love these!!

HOO HOO Wants Breakfast??
We made this fun Owl Breakfast awhile back using pancakes, a clementine, whipped cream, and 1 dark grape.
We shaped our pancakes in the pan with our pancake mix into the owl body and wings. We cut around the edges with kitchen scissors to clean it up and placed it on the plate. We used pieces of clemtine for the feet and nose. We sprayed whipped cream on for the eyes and cut 1 dark grape for the pupils.
This is so easy and a fun breakfast to make with the kids!

Spider Man Party!
My older son had a birthday this past weekend and wanted a Spider Man party. His birthday falls so close to Halloween so we thought would be fun to make all of the party food look like spiders or Spiderman. I am sure Spiderman is the #1 party for boys, but we still tried to come up with original ideas. I was pressed for time so some things look a bit sloppy, but at least you will get a idea.
I had some left over bags of easter egg marshmallows (with a good date of course) and used them for these Spider Man Pops. I just sprayed them with red color spray and added the web with black edible marker. The eyes are black and white cookie frosting. We put them on a pop and these were a definite hit with the kids!
We made this Spider Cheese Ball that turned out pretty cute! We just made a basic ranch cheese ball and shaped a body and a head. We crushed blue tortilla chips and rolled the cheese balls in that to make it black. We made the eyes with cream cheese and cut off the ends of 1 black olive for the pupils. We were going to do large pretzel legs, but the boys wanted black legs. I just grabbed some black pipe cleaners and used those.
We thought it would be fun to make a Spider Man head using 7 layer dip. I don't think ours ended up being 7 layers, but we made the top of it salsa to make it red. We made the eyes and web with sour cream and outlined the eyes with sliced black olives.
We served it with Spooky Chips that we got at World Market...I just love that store!
We made these mini Spider Web Pizzas using english muffins, sauce, and string cheese....
We made Deviled Eggs with a paprika spider on top. I just cut out a small spider that I printed from the computer and used that as a template for the spider. Quick and easy and they turned out pretty cool!
We made these easy Spider Cookies using store bought devil's food cookies. We just piped on legs onto wax paper. We put the cookie in the middle of the legs and let it dry. I had just a few edible eye balls and used those on some. For the other cookies we just piped on white cookie frosting and used mini chocolate chips for the pupils. I thought those looked better. These would look better if I had more time...I was a bit rushed when making these....
We through in some of these Cracker Spider Snacks for the little ones at the party. This was a quick and last minute thing. Kids always have fun making these!
The birthday boy wanted Peter Parker Punch so his Uncle Brian made him a label...
My son also wanted Spider Man jumping from buildings on his cake and this is the best I could come up with not having a guide of some sort. I made the cake in two jelly roll pans lined with parchment paper. I flipped one onto a dish and frosted it. Flipped the other on top of that. I made the buildings out of rice krispie treats. I made green frosting for the grass and gray for the buildings. I used cookie frosting to make the windows. I broke off pieces of graham crackers and frosted them with black cookie frosting to make the roads. I washed a few hot wheel cars to put on the roads. The webs are white chocolate that I piped onto wax paper. We used one of their Spider Man toys for the top.
Here he is and his cake (that the kids had fun playing with)! They grow way too fast!:(
This was a costume party, but my birthday boy was too hot and took his Spider Man costume off. However...his half Robin half Spider Man baby brother had a good time wearing his mask!

Black Bean Soup with Toasted Jack-O-Lanterns!
My boys are not fond of any soups. I tried this fun way of getting them to eat black bean soup the other night and it worked! They would have never tried black bean soup if it wasn't for the tortilla shaped pumpkin. Of course I thought of the risk of them just eating the pumpkin tortilla and not taking a bite of soup, but they had to try the soup before they could eat a bite of the tortilla. They ended up loving it and had fun dipping the tortilla in the soup!
We took a veggie orange tortilla and cut a jack-o-latern out of it with a knife and kitchen scissors. Place your bowl on top as a guide. I also had spinach tortillas so we cut a stem out of that. We toasted it just a little.
Here is the recipe I use for black bean soup. I have used this one for years and I think it is by far the best I have tried....
Black Bean Soup
Black Bean Soup
Ingredients
1 tablespoon olive oil
1 large onion, chopped
1 stalk celery, chopped
2 carrots, chopped
4 cloves garlic, chopped
2 tablespoons chili powder
1 tablespoon ground cumin
1 pinch black pepper
4 cups vegetable broth
4 (15 ounce) cans black beans
1 (15 ounce) can whole kernel corn
1 (14.5 ounce) can crushed tomatoes
Directions...
1.Heat oil in a large pot over medium-high heat. Saute onion, celery, carrots and garlic for 5 minutes. Season with chili powder, cumin, and black pepper; cook for 1 minute. Stir in vegetable broth, 2 cans of beans, and corn. Bring to a boil.
2.Meanwhile, in a food processor or blender, process remaining 2 cans beans and tomatoes until smooth. Stir into boiling soup mixture, reduce heat to medium, and simmer for 15 minutes.
Pour the soup in a small bowl and place the pumpkin on top.
Give it a try and maybe it will work on your non soup eaters as well!

Spooky Marshmallow Pops!
I was having fun in the kitchen with my little boys this afternoon and we made these spooky pops out of marshmallows that we had on hand. These are so easy to make and we just used color spray and edible marker.
Candy Corn Pops...
We cut 2 square marshmallows (the s'mores marshmallows) into a triangle. Squeeze a little bit of cookie frosting on one side. Place a lollipop stick on that and put the other triangle marshmallow on top. Let it dry. We only had yellow edible marker so we used aluminum foil to cover the ends and sprayed on the orange color spary. We colored the yellow with edible marker.
Ghost Pops...
We had marhsmallows in the shapes of ghosts so we just squeezed cookie frosting on one side of 3 of them and layed the stick on top. Squeeze cookie frosting on one side of 3 more and press those on the stick. Let it dry. We added our faces with black edible marker.
Pumpkin Pops...
We sprayed a jumbo marshmallow with orange color spray. Let it dry and press it on a stick. Draw on the face with black edible marker. We used a green sour candy for the stem. We made a hole on top and pressed it in the hole with a small dot of cookie frosting.
Frankenstein Pops...
We used a square marshmallowa and frosted one side of it. Lay the stick on top and press the other square marhsmallow on top. Let it dry and then spray with green color spray or color with green edible marker. We colored the hair, mouth, and eye brows with black edible marker. We glued on edible eyes with cookie frosting. We cut a mini marshmallow in half and attached on the sides for the electrodes.
These are so much fun to make with the kids! We hope that you have fun making them like we did!

Fun Fruit Spooky Snacks!
We made a few Halloween snacks out of fruit and wanted to share them with all of you! All of these are so easy and make great after school snacks!
This is our Dracula made with 1 red apple, a hand full of raisins, peanut butter, & 2 mini marshmallows.
We cut the apple almost in half...just enough to where the seeds would not show. Make the hair with raisins and attach them with peanut butter. Cut a marshmallow in half for the eyes. Cut a couple of raisins in half to make the eyes, eye brows, and mouth. Cut the other marshmallow in half...then cut that half in another half to make the fangs. Pile on raisins for the cape and we cut out a bow tie with some of the apple skin.
This one was a big hit with the kids!!!
This is our Frankenstein Apple. We made this using 1 green apple, a hand full of raisins, 1 mini marshmallow, and 2 square marshmallows.
We cut the raisins in half on this one to make the hair. No need for peanut butter...it will stick. Cut the mini marshmallow in half for the eyes and press on with the sticky side. Cut 1 raisin in half and press on the marshmallow. Make the face details with the cut raisins. Cut the electrodes out of the square marshmallows and just set them on the sides.
This is a fun Pumpkin Orange snack that we made for my 1 year old. We used manderine oranges, chopped up raisins, and a tip of a large pretzel stick.
We arranged our oranges on a plate into a pumpkin shape. We chopped up raisins (to prevent choking) and shaped the pumpkin eyes and mouth. He usually dives right in, but had fun playing with it and poking at it a bit before he gobbled it up!

Ghostly Pita Pizza!
We made these fun and super easy ghost pizza's using pita bread, pizza sauce, mozzerella cheese, and black olives.
Pre-heat the oven to 350.
Take the pita rounds and cut out your ghost shape with kitchen scissors. Spread the pizza sauce on and spinkle the cheese on top. Cut the tips off of the black olives to make the eyes and mouth.
Pop it in the oven for 8-10 minutes until the cheese melts.
Let the kids cut out and decorate their own pizza ghost!

Costume Fun!
This obviously has nothing to do with being in the kitchen, but my boys wanted to share their Halloween costumes. We always make our own costumes and the boys have won 1st place in the Marietta city costume contest for the last several years. My husband can make amazing things out of boxes! I am not very good at sewing, but it seems to be at least good enough for a win. We let the boys pick out what they want and go from there.
Here is this years costumes. They wanted sea life and picked out what they wanted...except for my 1 year old.:)
Here is my 7 year old Shark. My husband made this out of boxes and spray paint. The eyes are lids from a Wendy's frosty cup. It turned out so cool!
My 5 year old wanted a octopus. This is the best I could come up with not having a pattern. It almost looks like a half octopus/squid. I used felt material, 2 pillows sewn together, a blue bath mat, pool noodles cut in half, and hangers.
I cut the suction cups off of a blue bath mat to make the tenticles. I used wire hangers to poke through and inside the pool noodles to make it bendable. The hardest part was making it comfortable for him. He ended up loving it!
Here is my little baby 1 year old Seal. My mother actually made this costume a couple of years ago and I just altered it for him to be able to walk. She did such a great job and he was definitely the hit of the costume contest this year!
This is terrible lighting, but at least they were all still!
These are the costumes from last year. They had a auto theme. They got 1st place in all categories! yay!....
My then 6 year old was a gas pump. All made out of boxes and paint. Yeah...my husband is pretty amazing!
Here is my then 4 year old as a greaser in a vintage roadster. Again...all from boxes and paint..
My little baby oil can. Made from foam and material. I used a party hat with a big straw in the middle and covered that with material.
Here are the costumes from 2009. The boys wanted pirates, so we came up with some not so typical pirate costumes! They got 1st place in all categories they were in.
Here is my then 5 year old as a pirate in a ship. My husband made this all from boxes, tubes, and paint. I used place mats for the flags and sewed on real dred locks onto a bandana...eww!
Here is my then 3 year old as a treasure chest. My husband made this all form boxes and paint. I decorated it by hot glueing on jewlery and plastic coins. I tried to paint his face gold and he is weaing one of those plastic crowns. We also glued sand and sea shells on the bottom...
This is from 2008. My then 4 year old wanted to be a robot and my husband made this out of boxes and paint. It even lit up! He won the grand prize!
Here is my then 2 year old skunk. My mother made this and I loved it!
